Cheezits

Ingredients-

8 oz extra sharp cheddar, room temp

4 T butter, room temp

1 t kosher salt

120 g flour

2 T ice water

Method-

1- In a stand mixer or with a hand mixer, cream together the butter, cheese, and salt. Just like you would butter and sugar for a cookie.

2- Add the flour, mix for a few seconds, scrape the bowl down, and mix for like 30 more seconds. If the dough is too dry crumbly, proceed to step three. If the dough looks good, skip to step four.

3-Add water, mix until dough forms. 

4-Divide the dough into two, press flat between two sheets of parchment. Rest in the fridge for 30 minutes to an hour. 

5- Heat the oven to 375, and remove the dough from the fridge. Let the dough warm up a bit and then roll thin, like 1/8”. Peel off the top piece of paper. If the dough is too sticky, place it back in the fridge for 15 minutes and then peel the paper. Score the dough sheet and poke holes so the crackers look like cheezits.

6- Bake at 375. Check the crackers and rotate the pan every 5 minutes until it’s done. Allow the crackers to cool on a rack and then remove from the paper and break the crackers into squares.
