Shark Gummies

Ingredients-

60g powdered gelatin

140g cold water (for blooming)

160g sugar (cook to 115-120 Celsius)

60g water (for sugar)

200g glucose (or other very thick inverted sugar syrup like corn syrup)

10g citric acid

2 drops food coloring (may vary)

5-10 drops aroma extract (may vary)

Pinch of salt

Method-

 

1- Bloom the gelatin. In a bowl, combine the gelatin and cold water. Mix thoroughly and set aside.

2- Cook the sugar to soft ball. In a pot, combine the sugar and 60 g of water and cook to between 234-240 degrees. Remove from heat.

3- Add the glucose/corn syrup and stir. 

4-Add gelatin to the hot sugar and stir gently to combine. Skim the foam and bubbles and discard. Add the flavor, salt, and citric acid at this point and gently stir. Divide the mixture among squeeze bottles, however many colors you want to make. Keep the squeeze bottles in hot water so the mixture stays liquid while you work.

5- Fill the gummy molds and place in the refrigerator for 90 minutes.

6- Unmold the gummies and toss in dextrose powder if you have it. It helps set the outside of the dummies so they don’t stick together in a bag.
